Valheim mods run on BepInEx and the Thunderstore catalog, not the Steam Workshop. Install BepInEx, then upload your mods from the panel's file manager. Check whether each mod is server-side, client-side or both: mismatched versions between you and your players are the number one cause of failed connections. Crossplay must be off.

In standard co-op, the host's machine runs the session: if it's off or overloaded, no one can play and everyone suffers its slowdowns. A dedicated server stays online at all times, with its own resources and without exposing your personal address. Your world keeps going even while you sleep.
